Compressed watermelon with whipped feta

Ingredients

1 medium-sized watermelon

Mint-infused sugar syrup

450 ml water

110 g caster sugar

1 cup mint leaves, picked

Peel of 1 lemon

Whipped feta

150 g feta cheese, crumbled

60 ml thickened cream

Zest of 1 lemon, zested using a microplane 

To serve

1 tbsp olive oil Micro herbs (such as mint)

Method

Mint-infused sugar syrup

  1. Place the water and caster sugar into a medium sized saucepan, stir, then heat on medium heat, induction setting 6 until the sugar has completely dissolved. Increase the heat to induction setting 8 and bring the sugar to the boil.
  2. Add the mint leaves and lemon peel, reduce the heat to induction setting 6 and simmer for 8 minutes.
  3. Store the syrup overnight in the fridge to infuse. Strain the leaves and zest and set aside.

Watermelon

  1. Cut the watermelon into large rectangular slices to the size of your vacuum sealing bag to minimise wastage (approximately 8 cm x 8 cm in 2.5 cm thickness).
  2. Place the slices into a large vacuum sealing bag with 60 ml of the mint-infused sugar syrup.
  3. Place into vacuum sealing drawer and Vacuum on level 3 and Seal on level 3.
  4. Refrigerate for 3-4 hours, or overnight for a deeper flavour infusion

Whipped feta

  1. In a mixing bowl, combine the crumbled feta, cream, and half the lemon zest.
  2. Whisk until smooth and creamy. Add more cream if needed to adjust the consistency. Ensure you don’t overwhip as it will split.
  3. Transfer the mixture into a piping bag

To serve

  1. Dice the watermelon into 2.5 cm squares. Allow to rest so the extra syrup is drained off.
  2. Pipe feta onto the watermelon squares and drizzle with olive oil. Top with micro herbs and lemon zest.
