Grilled stone fruit salad with goat's cheese and citrus dressing

Ingredients
Grilled stone fruit salad
4 stone fruit, halved, seeds removed
and cut into 1 cm slices
50 ml olive oil
1 head of green butter lettuce, washed
1 bunch of mâche, washed and torn
into pieces
150 g goat’s cheese, crumbled
4 baby radishes, thinly sliced,
stored in cold water
Citrus dressing
2 tbsp honey
1 lemon, zest and juice
1 tbsp Dijon mustard
150 ml olive oil
Salt and pepper, to taste
Method
Citrus dressing
- In a small bowl, whisk together the honey, lemon zest, juice and mustard until emulsified. Slowly add the olive oil, whisking continuously. Season with salt and pepper to taste, set aside.
Stone fruit
- Preheat the griddle plate on medium heat, induction setting 5 for 5 minutes before increasing the heat to high heat, induction setting 8.
- Toss the stone fruit slices in olive oil. Place onto the griddle plate and grill for 2-3 minutes per side, or until browned.
To serve
- Arrange the leaves on a large serving platter. Top with the stone fruit, crumble the goat’s cheese over the fruit and top with the sliced radishes. Drizzle the citrus dressing over the salad.
