Ingredients

Fried garlic oil

60 ml vegetable oil
6 garlic cloves, sliced

Spanner crab fried rice

2 tbsp rice bran oil
2 eggs, lightly beaten
60 g squid, thinly sliced
100 g peeled king prawns, roughly sliced
150 g spanner crab meat
500 g (3 cups) cooked white rice, cooled overnight in the fridge
40 g fresh shiitake mushrooms, thinly sliced
1 tsp chicken stock powder, optional
1 tsp MSG, optional
1 tbsp fried garlic oil
20 g unsalted butter, softened
Salt flakes, to taste
Ground white pepper, to taste
10 g chives, finely sliced

To serve

Tobiko, flying fish roe
Trout roe

Method

Fried garlic oil

  1. Place a saucepan on medium-low heat, induction setting 4 and heat for 5 minutes. Add the oil and increase the heat to medium, induction setting 7 and heat the oil for 1 minute.
  2. Add the garlic and deep fry for 20-30 seconds until golden brown.
  3. Set aside to allow the oil to infuse with the garlic.

Spanner crab fried rice

  1. Heat a wok on medium-low, induction setting 4 for 5 minutes.
  2. Turn up the heat to high heat, induction setting 8. Add the rice bran oil and heat the oil until the surface shimmers slightly.
  3. Add the eggs and leave to cook on the base of the wok for 10 seconds. Stir, scrambling the egg, for another 10 seconds.
  4. Add the seafood and gently stir-fry.
  5. Add the rice and using a wooden spoon or spatula, break up the rice and continue to stir-fry for 2 minutes.
  6. Add the remaining ingredients, except for the chives. Stir-fry gently for 3 minutes until the rice is evenly coated. Season with salt and pepper, to taste.
  7. Add the chives and quickly stir-fry until the fragrance of the chives is released.

To serve

  1. Divide the rice into serving bowls. Garnish with tobiko and trout roe.

Hints and tips

  • Preheating the wok on a lower setting enables the heat to travel up the sides, essential for wok cooking.
  • Fried garlic can be cooked on the induction cooktop using TempControl level 1.
  • We recommend speaking to your fishmonger to select sustainable seafood. Buy crab that is locally caught, or substitute with other seasonal crustaceans.
  • 3 cups of cooked white rice is equivalent to 1 cup of uncooked rice.
  • The rice can be cooked using Miele’s Automatic Programme; Select Rice / Long Grain Rice / Jasmine Rice / Al Dente.
  • MSG can be replaced with a pinch of sugar, a dash of fish sauce and a splash of light soy sauce, to taste.
  • Leftover garlic oil can be stored in a sterilised jar and kept in the fridge for up to one month.
