Tomato consommé with basil oil

Ingredients
Consomme
8 ripe tomatoes (a mix of varieties)
Salt, to taste
Basil oil
1 cup basil leaves
125 ml olive oil
Pinch of salt
Pinch of sugar

Method
Tomato consommé
- Wash the tomatoes and remove the stems. Cut into quarters and place into an unperforated steam container.
- Place the container into the steam oven and select Blanch. Follow the prompts on the screen, then strain the tomatoes when completely cooled.
- Transfer the tomatoes into a food processor and add a pinch of salt. Blend for 3-4 minutes to create a fine pulp.
- Place a fine mesh sieve, or a sieve lined with a coffee filter or muslin over a bowl. Pour the tomato mixture through the sieve and strain the juice into the bowl.
- Place the bowl into the fridge for a few hours (or overnight) to drain slowly. A little weight on top of the pulp towards the end of the draining process can help with straining.
- The result should be a chilled, clear, flavourful liquid.
Basil oil
- Place the basil leaves and olive oil into a food processor and blend until smooth.
- Place a fine mesh sieve, or a sieve lined with a coffee filter or muslin over a bowl. Pour in the basil oil and press gently to extract as much oil as possible. Add a pinch of salt and a pinch of sugar. Stir to combine
To serve
- Pour the chilled consommé into bowls or shot glasses, top with a few drops of basil oil and garnish with micro herbs.
Hints and Tips
- Leftover tomato pulp can be used to make a pasta sauce.
